Mediterranean Chicken Zucchini Bake

Ingredients

  • 2 chicken breasts, cubed

  • 2 medium zucchinis, sliced or cubed

  • 1 small red onion, sliced

  • 1 cup cherry tomatoes (or diced tomatoes)

  • 3–4 garlic cloves, minced

  • 2 tbsp olive oil

  • 1 tsp oregano

  • 1 tsp paprika

  • ½ tsp cumin (optional)

  • ½ tsp black pepper

  • ½ tsp salt (adjust to taste)

  • ½ tsp chili flakes (optional)

  • Juice of ½ lemon

  • ¼ cup feta cheese, crumbled

  • Fresh parsley or basil for topping


Instructions

1. Prep the Chicken

  • In a bowl, combine cubed chicken with olive oil, garlic, oregano, paprika, salt, pepper, chili flakes, cumin, and lemon juice.

  • Mix well and marinate for 10–15 minutes (longer = more flavor).

2. Prepare the Veggies

  • In a baking dish, add zucchini, cherry tomatoes, and red onion.

  • Drizzle with a little olive oil and season lightly with salt & pepper.

3. Add the Chicken

  • Spread the marinated chicken evenly over the vegetables in the baking dish.

4. Bake

  • Bake at 400°F (200°C) for 25–30 minutes, or until chicken is cooked and vegetables are tender.

5. Finish with Feta

  • Remove from oven and sprinkle crumbled feta on top.

  • Bake for another 3–5 minutes just to warm the feta slightly.

6. Garnish & Serve

  • Top with fresh parsley or basil.

  • Serve as-is or with:

    • Rice

    • Quinoa

    • Couscous

    • Garlic bread
