Healthy Tomato Zucchini Pasta
Ingredients

2 medium zucchinis, diced or spiralized

2 cups cherry tomatoes (or 2 large tomatoes), halved

3 cloves garlic, minced

2 tbsp olive oil
-
½ tsp Italian seasoning
-
¼ tsp chili flakes (optional)

Salt & black pepper to taste
-
8 oz whole-wheat or regular pasta (your choice)

¼ cup pasta water (reserved)
-
Fresh basil, for topping
-
Grated parmesan (optional)
Instructions
1. Cook the Pasta

Boil pasta according to package instructions.

Reserve ¼ cup pasta water, then drain.
2. Cook the Veggies

Heat olive oil in a skillet.

Add garlic and sauté 30 seconds.

Add cherry tomatoes and cook 3–4 minutes until softened.

Add diced zucchini and cook another 4–5 minutes until tender.

Season with salt, pepper, Italian seasoning, and chili flakes.
3. Combine
-
Add cooked pasta into the skillet.

Pour in a splash of the reserved pasta water to help create a light sauce.

Toss well to coat.
4. Finish

Add fresh basil and a sprinkle of parmesan if desired.

Serve warm!
