Hot Honey Stuffed Sweet Potatoes (Upgraded High-Protein Version)
Ingredients (Serves 1–2)

1 large sweet potato

4–5 oz lean ground beef (93% lean)

½ cup cottage cheese

½ avocado, sliced or diced

1–2 tbsp hot honey
-
½ tsp paprika
-
½ tsp garlic powder
-
Salt & pepper to taste

Optional toppings: green onions, chili flakes, lime, cilantro
Instructions
1. Bake or Air Fry the Sweet Potato

Bake: 400°F (200°C) for 40–50 min
-
Air fry: 390°F (200°C) for 30–35 min
Cook until soft and fluffy inside.
2. Cook the Beef

Brown lean ground beef in a skillet.

Season with salt, pepper, paprika, and garlic powder.

Cook until no longer pink.
3. Stuff the Sweet Potato
Slice the sweet potato open and fluff the inside with a fork.
Layer in this order:

Spoon in cooked seasoned beef

Add a generous scoop of cottage cheese

Top with avocado

Drizzle with hot honey

Finish with green onions, chili flakes, or cilantro if you like
