Crustless Spinach, Onion & Feta Quiche

Ingredients

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2–3 garlic cloves, minced (optional)

  • 2 cups fresh spinach (or 1 cup frozen, thawed & squeezed dry)

  • 4 large eggs

  • 1 cup milk (regular or almond milk)

  • ½ cup feta cheese, crumbled

  • Salt & black pepper to taste

  • ½ tsp oregano (optional)

  • ¼ tsp chili flakes (optional)


Instructions

1. Prep the Veggies

  • Heat olive oil in a skillet.

  • Sauté diced onion for 3–4 minutes until soft.

  • Add garlic and cook 30 seconds.

  • Add spinach and cook until wilted.

  • Remove from heat and let cool slightly.


2. Make the Egg Mixture

  • In a bowl, whisk together:

    • Eggs

    • Milk

    • Salt, pepper, oregano

  • Stir in the spinach–onion mixture and feta cheese.


3. Bake

  • Pour the mixture into a greased pie dish or baking dish.

  • Bake at 375°F (190°C) for 28–32 minutes until the center is set.

  • Let cool for 5 minutes before slicing.


Serving Ideas

  • Enjoy warm or cold

  • Pair with a side salad

  • Great for breakfast meal prep

  • Add-ins: mushrooms, roasted red peppers, sun-dried tomatoes
