Crustless Spinach, Onion & Feta Quiche
Ingredients

1 tbsp olive oil

1 small onion, diced
-
2–3 garlic cloves, minced (optional)

2 cups fresh spinach (or 1 cup frozen, thawed & squeezed dry)

4 large eggs
-
1 cup milk (regular or almond milk)

½ cup feta cheese, crumbled
-
Salt & black pepper to taste
-
½ tsp oregano (optional)
-
¼ tsp chili flakes (optional)
Instructions
1. Prep the Veggies

Heat olive oil in a skillet.

Sauté diced onion for 3–4 minutes until soft.

Add garlic and cook 30 seconds.

Add spinach and cook until wilted.
-
Remove from heat and let cool slightly.
2. Make the Egg Mixture

In a bowl, whisk together:

Eggs
-
Milk
-
Salt, pepper, oregano
-

Stir in the spinach–onion mixture and feta cheese.
3. Bake
-
Pour the mixture into a greased pie dish or baking dish.
-
Bake at 375°F (190°C) for 28–32 minutes until the center is set.

Let cool for 5 minutes before slicing.
