Ground Beef & Vegetable Skillet
Ingredients
500 g (1 lb) ground beef
1 medium sweet potato, diced small
1 zucchini, diced
1 small onion, chopped
2 cloves garlic, minced
2 tbsp olive oil
1 tsp paprika
½ tsp ground cumin
½ tsp black pepper
1 tsp salt (adjust to taste)
½ tsp chili flakes (optional)
2 tbsp fresh parsley or cilantro, chopped
Instructions
Cook sweet potatoes
Heat 1 tbsp olive oil in a large skillet over medium heat.
Add diced sweet potatoes and cook 6–8 minutes, stirring, until tender and lightly golden.
Remove from pan and set aside.
Brown the beef
Add remaining oil to the skillet.
Add onion and cook 2 minutes until soft.
Add garlic, cook 30 seconds.
Add ground beef and cook until browned, breaking it apart.
Season
Stir in paprika, cumin, salt, pepper, and chili flakes.
Cook 1–2 minutes to bloom spices.
Add vegetables
Add zucchini and cooked sweet potatoes back to the pan.
Cook 4–5 minutes until zucchini is tender but not mushy.
Finish
Taste and adjust seasoning.
Sprinkle with fresh parsley or cilantro before serving.
Serving Ideas
Serve as-is for a low-carb meal
Spoon over rice or quinoa
Wrap in tortillas or lettuce cups
Top with a fried egg or yogurt sauce 😋
Tips
Swap beef for ground turkey or chicken if you like.
