Garlicky Mushroom & Greens Stir-Fry

Ingredients

2 tbsp olive oil or avocado oil

8 oz mushrooms (cremini or button), sliced

1 bunch broccolini (or broccoli rabe), trimmed

1 medium carrot, thinly sliced

½ large onion, sliced
-
2 cloves garlic, minced
-
1–2 dried red chilies or ½ tsp chili flakes (to taste)

2 tbsp soy sauce (or tamari)
-
1 tbsp oyster sauce or hoisin sauce

1 tsp sesame oil
-
Salt & black pepper, to taste

Optional: splash of water or veggie broth

Instructions

Prep the veggies
Slice everything before you start—this moves fast once the pan is hot. -
Sauté the mushrooms
Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
Add mushrooms in a single layer and let them brown undisturbed for 2–3 minutes. Stir and cook until golden and slightly crispy. Remove and set aside. -
Cook aromatics & veggies
Add remaining oil. Toss in onions and carrots; cook 2–3 minutes until softened.
Add garlic and chili flakes and stir for 30 seconds until fragrant. -
Add the greens
Add broccolini and a splash of water or broth. Cover and steam for 1–2 minutes until bright green and tender-crisp. -
Bring it together
Return mushrooms to the pan. Add soy sauce, oyster (or hoisin) sauce, and sesame oil.
Toss everything well and cook another 1–2 minutes. -
Finish & serve
Taste and adjust seasoning. Garnish if you like.
