Garlicky Mushroom & Greens Stir-Fry
Serves: 2–3
Time: ~20 minutes
Ingredients
2 tbsp olive oil or avocado oil
8 oz mushrooms (cremini or button), sliced
1 bunch broccolini (or broccoli rabe), trimmed
1 medium carrot, thinly sliced
½ large onion, sliced
2 cloves garlic, minced
1–2 dried red chilies or ½ tsp chili flakes (to taste)
2 tbsp soy sauce (or tamari)
1 tbsp oyster sauce or hoisin sauce
1 tsp sesame oil
Salt & black pepper, to taste
Optional: splash of water or veggie broth
Optional Garnish
Chopped parsley or scallions

Instructions
Prep the veggies
Slice everything before you start—this moves fast once the pan is hot.Sauté the mushrooms
Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
Add mushrooms in a single layer and let them brown undisturbed for 2–3 minutes. Stir and cook until golden and slightly crispy. Remove and set aside.Cook aromatics & veggies
Add remaining oil. Toss in onions and carrots; cook 2–3 minutes until softened.
Add garlic and chili flakes and stir for 30 seconds until fragrant.Add the greens
Add broccolini and a splash of water or broth. Cover and steam for 1–2 minutes until bright green and tender-crisp.Bring it together
Return mushrooms to the pan. Add soy sauce, oyster (or hoisin) sauce, and sesame oil.
Toss everything well and cook another 1–2 minutes.Finish & serve
Taste and adjust seasoning. Garnish if you like.
