Garlic Butter Mushrooms & Broccoli

Ingredients

  • 2 cups broccoli florets

  • 2 cups mushrooms (button or cremini), sliced

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 3–4 cloves garlic, minced

  • ¼ cup vegetable or chicken broth

  • 1 tbsp soy sauce (or Worcestershire)

  • Salt & black pepper to taste

  • Optional: pinch of chili flakes, parsley

Instructions

  1. Heat olive oil + 1 tbsp butter in a skillet over medium-high heat.

  2. Add mushrooms, spread out, and cook 4–5 min until golden (don’t stir too much).

  3. Add broccoli and cook 2–3 min until bright green.

  4. Stir in garlic, cook 30 seconds until fragrant.

  5. Add broth + soy sauce, simmer 2–3 min until glossy and slightly saucy.

  6. Finish with remaining butter, black pepper, and optional chili flakes.

  7. Garnish with parsley and serve hot.

Tips

  • Great as a side for steak, chicken, or over rice

  • Add parmesan or sesame seeds for extra flavor

  • Want it vegan? Use plant butter
