Air Fryer Steak & Garlic Potatoes (with Herb Butter)

Ingredients
Steak
2 ribeye or sirloin steaks (1–1½ inches thick)
1 tbsp olive oil
1 tsp kosher salt
1 tsp black pepper
½ tsp garlic powder
½ tsp smoked paprika (optional)
Potatoes
1 lb baby potatoes (red or gold), halved
1½ tbsp olive oil
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp dried rosemary or thyme
Herb Butter
4 tbsp unsalted butter, softened
1 clove garlic, finely minced
1 tsp fresh parsley, finely chopped
Pinch of salt
Instructions
1. Prep the Herb Butter
Mix softened butter, garlic, parsley, and salt.
Shape into a small disk or log.
Refrigerate until ready to use.
This keeps the butter from melting too fast and gives you that perfect steak-top finish.
2. Prepare the Potatoes
Toss potatoes with olive oil, salt, pepper, garlic powder, and rosemary.
Preheat air fryer to 400°F (200°C).
Place potatoes in the basket in a single layer.
Air fry for 10 minutes, shaking halfway.
3. Season the Steaks
Pat steaks completely dry with paper towels.
Rub with olive oil.
Season generously on both sides with salt, pepper, garlic powder, and paprika.
Dry steak = better crust.
4. Air Fry the Steaks
Remove potatoes temporarily or push them to the sides.
Place steaks in the air fryer basket.
Cook at 400°F (200°C):

Flip steaks halfway through.
5. Finish with Butter
Immediately top each hot steak with a slice of herb butter.
Let rest 5 minutes (don’t skip this).
Butter melts into the steak, just like the photo.
6. Serve
Plate steaks with crispy potatoes.
Spoon melted butter over the steak.
Optional: sprinkle extra parsley or flaky salt.
Pro Tips (Worth It)
Thicker steaks = juicier results
Let steak come to room temp for 20 minutes before cooking
Add a quick spray of oil halfway through for extra browning
If your air fryer is small, cook steaks one at a time for best crust
