Crispy Garlic Butter Hasselback Potatoes

Ingredients

Potatoes

  • 4 medium Yukon Gold or russet potatoes (similar size)

  • 3 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika (optional, for color)

Garlic Butter

  • 4 tbsp unsalted butter, melted

  • 3 cloves garlic, finely minced

  • 1 tsp dried thyme or rosemary

  • Optional: ¼ tsp chili flakes

Finish

  • 2 tbsp fresh parsley, finely chopped

  • Optional toppings:

    • Grated parmesan

    • Sour cream

    • Extra butter cubes (like in the photo)


Instructions

1. Preheat & Prep

Preheat oven to 425°F (220°C).

Wash potatoes well and pat dry.
Do not peel — the skin helps them crisp beautifully.


2. Slice Hasselback Style

Place each potato between two chopsticks or wooden spoons.

  • Slice â…›-inch (3 mm) apart

  • Do NOT cut all the way through

This creates the fan effect while keeping the potato intact.


3. Season First Round

Place potatoes on a baking tray (cut-side up).

Brush generously with olive oil, making sure oil gets between the slices.

Sprinkle with:

  • Salt

  • Black pepper

  • Paprika

Bake for 25–30 minutes until the slices start opening.


4. Make Garlic Butter

While baking, mix:

  • Melted butter

  • Garlic

  • Thyme or rosemary

  • Chili flakes (if using)


5. Butter & Bake Again

Remove potatoes from oven.

  • Spoon garlic butter deep into the cuts

  • Let butter drip all the way down

Return to oven and bake 25–35 minutes more, until:

  • Edges are deep golden brown

  • Centers are fork-tender

  • Tops are crispy


6. Final Touch

Dot with small butter cubes (like the photo) and bake 5 more minutes.

Remove, sprinkle with fresh parsley.

Optional: shower with parmesan while hot.

🔥 High heat (don’t lower temp)
🔥 Baste butter twice if you want restaurant-level results
🔥 Space potatoes apart — no crowding
