Crispy Fried Potatoes & Onions (Skillet-Style)

Ingredients (Serves 3–4)

  • 2 lbs (900 g) potatoes
    (Yukon Gold or red potatoes work best)

  • 1 large onion, thinly sliced

  • 4–5 tbsp oil (vegetable, olive oil, or butter/oil mix)

  • 3 cloves garlic, minced

  • 1 tsp salt (adjust to taste)

  • ½ tsp black pepper

  • ½ tsp paprika

  • ½ tsp garlic powder (optional but good)

  • ¼ tsp chili flakes (optional)

  • 1 tbsp fresh parsley (optional, for garnish)


Step-by-Step Instructions

1. Prep the Potatoes

  1. Wash and scrub potatoes well (peel if you prefer).

  2. Slice into ½-inch thick rounds or chunks.

  3. Place in cold salted water for 15–20 minutes.

    • This removes excess starch = crispier potatoes.

  4. Drain and pat very dry with a kitchen towel.

⚠️ Moisture is the enemy of crispiness—dry them well.


2. Pre-Cook (Optional but Recommended)

This ensures soft centers.

Option A: Boil

  • Boil potatoes in salted water for 6–8 minutes until just fork-tender.

  • Drain and let steam-dry 5 minutes.

Option B: Microwave

  • Microwave potatoes with a splash of water, covered, 5–6 minutes.

  • Drain and dry well.


3. Fry the Potatoes

  1. Heat a large skillet over medium-high heat.

  2. Add oil and let it get hot (shimmering).

  3. Add potatoes in a single layer.

  4. Let them cook undisturbed for 4–5 minutes.

  5. Flip and cook another 4–5 minutes until golden and crispy.

🔥 Do not overcrowd—cook in batches if needed.


4. Add Onions & Garlic

  1. Lower heat to medium.

  2. Add sliced onions to the skillet.

  3. Cook 5–7 minutes, stirring occasionally, until soft and caramelized.

  4. Add minced garlic and cook 30 seconds until fragrant.


5. Season Everything

Sprinkle over:

  • Salt

  • Black pepper

  • Paprika

  • Garlic powder

  • Chili flakes (if using)

Toss gently to coat evenly.


6. Final Crisp

Increase heat slightly and let everything cook 2–3 more minutes, allowing edges to brown beautifully.


Serve Hot

  • Garnish with fresh parsley

  • Serve as:

    • Breakfast side (eggs, bacon)

    • Dinner side (chicken, steak)

    • Or straight from the pan 😅
