Crispy Seasoned Chicken Drumsticks

🍗 Ingredients (serves 4)

  • 8–10 chicken drumsticks

  • 1½ cups buttermilk (or plain yogurt thinned with water)

  • 1 tbsp lemon juice or vinegar

  • 1½ tsp salt (adjust to taste)

  • 1 tsp black pepper

  • 1½ tsp paprika (smoked if possible)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp ground ginger

  • ½ tsp cayenne or chili powder (optional)

  • ½ tsp dried thyme or oregano

For Coating

  • 1 cup all-purpose flour

  • 2 tbsp cornstarch (secret for crispiness)

  • ½ tsp salt

  • ½ tsp paprika

  • ½ tsp black pepper

For Cooking

  • Oil (vegetable, canola, or sunflower)

    • Frying: enough for shallow frying

    • Baking: 2–3 tbsp


🧂 Step 1: Marinate the Chicken (Very Important)

  1. Wash chicken and pat dry.

  2. In a large bowl, mix:

    • Buttermilk

    • Lemon juice

    • Salt, pepper, paprika

    • Garlic powder, onion powder

    • Ginger, cayenne, herbs

  3. Add chicken and coat well.

  4. Cover and marinate:

    • Minimum: 1 hour

    • Best: Overnight in the fridge

🍞 Step 2: Coat for Crispiness

  1. Mix flour, cornstarch, salt, paprika, and pepper in a bowl.

  2. Remove chicken from marinade (don’t wipe it off).

  3. Roll each drumstick in the flour mixture.

  4. Press coating firmly onto the chicken.

  5. Let coated chicken rest 10 minutes (helps crust stick).


🔥 Method 1: Pan-Fried (Closest to the Photo)

  1. Heat oil in a deep pan over medium heat.

  2. Oil should be hot but not smoking.

  3. Fry drumsticks in batches:

    • Turn every 3–4 minutes

    • Fry 15–18 minutes total

  4. Chicken is done when:

    • Deep golden brown

    • Internal temp reaches 165°F / 75°C

  5. Drain on paper towels.

🔥 Method 2: Oven-Baked (Healthier, Still Crispy)

  1. Preheat oven to 425°F / 220°C

  2. Place chicken on a greased rack over a baking tray.

  3. Lightly drizzle or spray with oil.

  4. Bake:

    • 25 minutes → flip

    • Another 20–25 minutes until golden

  5. Broil for 2–3 minutes at the end for extra crisp.

  • Brush lightly with melted butter

  • Sprinkle flaky salt

  • Rest 5 minutes before serving
