Apple Cranberry Chicken Salad

Ingredients

  • 2 cups cooked chicken breast, shredded or diced

  • 1 medium apple, chopped (Honeycrisp or Fuji works great)

  • ⅓ cup dried cranberries (use reduced-sugar if you want it lighter)

  • ½ cup celery, finely chopped

  • ¼ cup red onion, finely chopped

  • ¼ cup chopped walnuts or almonds (optional)

  • 2 tbsp fresh parsley (optional)

Dressing

  • ¼ cup non-fat Greek yogurt

  • 1–2 tbsp light mayonnaise

  • 1 tsp Dijon mustard

  • 1–2 tsp lemon juice (prevents apples from browning)

  • Salt & pepper to taste

  • Optional: ½–1 tsp honey if you like it slightly sweeter


🥣 Instructions

1. Prep your ingredients

Chop the apple, celery, and onion.
Shred or dice the cooked chicken.

2. Make the dressing

In a small bowl whisk together:
Greek yogurt + light mayo + Dijon + lemon + salt + pepper.

3. Combine everything

In a large bowl add:
chicken + apple + cranberries + celery + onion + nuts (if using).
Pour dressing over and mix gently to coat.

4. Chill & serve

Refrigerate for 20 minutes to blend flavors.
Serve on:

  • lettuce cups

  • whole-grain bread

  • crackers

  • or enjoy as a bowl

  • Replace cranberries with fresh grapes for a lower-sugar option.

  • Reduce calories further by skipping nuts or using fewer.

  • Add a splash of vinegar if you like tangier salads.
