Beef & Bell Pepper Stir-Fry (Pepper Steak)

Ingredients
Beef

450 g (1 lb) beef sirloin, flank steak, or ribeye

Slice thinly against the grain
Vegetables

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow bell pepper, sliced

1 medium onion, sliced
-
2 cloves garlic, minced
-
1 tsp fresh ginger, grated (optional but 🔥)
Marinade (for tender beef)

1 tbsp soy sauce
-
1 tbsp oyster sauce
-
1 tsp cornstarch
-
1 tsp oil (vegetable or sesame)

½ tsp black pepper
Stir-Fry Sauce

2 tbsp soy sauce
-
1 tbsp oyster sauce
-
1 tbsp hoisin sauce (optional, adds depth)

½ cup beef broth or water
-
1 tsp sugar (or honey)
-
1 tsp cornstarch
-
½ tsp black pepper
For Cooking

2 tbsp vegetable oil
-
Optional garnish: chopped parsley or scallions
Instructions
1. Marinate the Beef
Add sliced beef to a bowl with all marinade ingredients.
Mix well and let it rest for 15–20 minutes.
This step keeps the beef juicy and tender—don’t skip it.
2. Mix the Sauce
In a small bowl, whisk together all stir-fry sauce ingredients until smooth.
Set aside.
3. Sear the Beef

Heat 1 tbsp oil in a wok or large skillet over high heat

Add beef in a single layer (cook in batches if needed)

Sear 30–45 seconds per side until just browned

Remove beef and set aside
The beef should be browned, not fully cooked yet.
4. Cook the Vegetables

Add remaining 1 tbsp oil

Toss in onions, cook 1 minute

Add bell peppers, garlic, and ginger
-
Stir-fry 2–3 minutes until slightly tender but still crisp
5. Bring It All Together

Return beef to the pan

Pour in the sauce

Toss everything together

Cook 1–2 minutes until sauce thickens and coats everything beautifully
Final Touch
Taste and adjust:

More soy sauce for salt

More black pepper for heat
-
Splash of water if sauce is too thick
Garnish with parsley or scallions.
