Veggie & Cheese Egg Bake (Breakfast Casserole)

🥚 Ingredients
Egg Base
8 large eggs
½ cup milk or half-and-half (creamier)
¼ tsp black pepper
¾ tsp salt
½ tsp garlic powder
½ tsp onion powder
½ tsp dried thyme or Italian seasoning
Vegetables
1 cup broccoli florets, finely chopped
1 cup mushrooms, sliced
¾ cup bell peppers (red + yellow), diced
1 cup fresh spinach, chopped
1 small onion, finely diced
Cheese Layer
1½ cups shredded cheddar (sharp recommended)
½ cup crumbled feta or ricotta (for creamy pockets)
Optional:
Mozzarella for melt
Parmesan for extra flavor
For Cooking Veggies
1 tbsp olive oil
Pinch of salt
🔥 Instructions
1. Preheat Oven
Preheat to 375°F / 190°C
Grease baking dish with butter or oil
2. Cook the Vegetables
(Important to avoid watery casserole)
Heat olive oil in a skillet over medium heat
Sauté onion for 2 minutes
Add mushrooms → cook until moisture evaporates
Add peppers & broccoli → cook 3–4 minutes
Add spinach last → wilt, then remove from heat
Lightly salt and let cool slightly
3. Mix Egg Base
In a large bowl:
Whisk eggs
Add milk, salt, pepper, garlic powder, onion powder, herbs
Whisk until smooth and slightly frothy
4. Assemble the Casserole
Spread cooked vegetables evenly in the dish
Sprinkle ½ of the shredded cheddar
Pour egg mixture over everything
Dot with feta or ricotta
Top with remaining cheddar
5. Bake
Bake uncovered 40–45 minutes
Top should be golden and slightly puffed
Center should be just set (no jiggle)
👉 If browning too fast, loosely tent with foil.
6. Rest & Slice
Let rest 10 minutes
Slice into thick squares
