1️⃣ Preheat & Prep
Preheat oven to 375°F (190°C).
Line an 8×8-inch baking dish with parchment paper (leave overhang for easy lifting).
2️⃣ Mix Dry Ingredients
In a large bowl, whisk together:
Oats
Baking powder
Cinnamon
Salt
3️⃣ Mix Wet Ingredients
In another bowl, whisk:
Mashed bananas
Eggs
Milk
Maple syrup or honey
Melted butter
Vanilla
4️⃣ Combine
Pour wet ingredients into dry.
Stir until fully combined.
Gently fold in blueberries (and any optional mix-ins).
The batter will be thick and spoonable.
5️⃣ Bake
Spread evenly in prepared pan.
Smooth the top.
Bake uncovered for 30–35 minutes, until:
Top is golden brown
Center is set
Edges pull slightly from the pan
6️⃣ Cool & Finish
Let cool for 10–15 minutes.
Lift out using parchment and slice.
Drizzle with warm honey or maple syrup just before serving.
