🧾 Ingredients
2 lbs (900g) ground beef (80/20 blend for best flavor)
½ lb (225g) ground pork (optional for juiciness)
3 large eggs
1 cup pork rinds (crushed finely, used instead of breadcrumbs)
½ cup grated parmesan cheese
1 tsp salt
1 tsp black pepper
1 tsp garlic powder (optional if you allow seasonings)
½ tsp onion powder (optional)
For the Glaze (optional but tasty):
¼ cup sugar-free ketchup (or plain tomato paste for stricter carnivore)
1 tbsp Worcestershire sauce (optional)
👨🍳 Instructions
Preheat Oven
Set oven to 375°F (190°C). Grease a loaf pan or line with parchment paper.
Mix the Meatloaf
In a large bowl, combine ground beef, ground pork, eggs, pork rinds, parmesan, and seasonings.
Mix gently with hands or a spatula until just combined (don’t overmix or it’ll get dense).
Shape & Add Glaze
Transfer mixture into the loaf pan and shape into a firm loaf.
If using glaze, brush it over the top evenly.
Bake
Bake uncovered for 50–60 minutes, or until internal temperature reaches 160°F (71°C).
Rest & Serve
Let meatloaf rest for 10 minutes before slicing. This keeps it juicy.
