Chicken Salad (Healthy & WW-Friendly)

Ingredients

  • 2 cups cooked chicken breast, shredded or diced

  • ½ cup celery, finely chopped

  • ¼ cup red onion, finely chopped

  • ¼ cup apples or grapes (optional)

  • ¼ cup fresh parsley or dill, chopped

Dressing

  • ¼ cup non-fat Greek yogurt

  • 1–2 tbsp light mayonnaise

  • 1 tsp Dijon mustard

  • 1–2 tsp lemon juice

  • Salt & pepper, to taste

Optional Add-ins

  • A few chopped nuts (walnuts/almonds)

  • Green onions

  • Paprika or garlic powder


🥣 Instructions

1. Prep the chicken

Use cooked, shredded, or diced chicken breast.
(Leftover rotisserie chicken works too — just remove skin to keep it light.)

2. Mix the veggies

In a large bowl, combine:

  • celery

  • red onion

  • apples or grapes (if using)

  • parsley or dill

3. Make the dressing

In a small bowl, whisk together:

  • Greek yogurt

  • light mayo

  • Dijon mustard

  • lemon juice

  • salt & pepper

Taste and adjust seasoning.

4. Combine everything

Add the chicken to the bowl of veggies.
Pour the dressing over the top.
Mix gently until fully coated.

5. Chill & serve

Refrigerate for 20–30 minutes for best flavor.
Serve on:

  • whole-grain bread

  • lettuce cups

  • inside a wrap

  • or with crackers
