Chicken Spinach & Mushroom Low-Carb Oven Dish
⭐ Ingredients

2–3 chicken breasts, sliced or cubed

2 cups fresh spinach

8 oz mushrooms, sliced

1 small onion, diced (optional)
-
3–4 garlic cloves, minced
-
1 cup heavy cream (or half-and-half for lighter)
-
½ cup chicken broth
-
½ cup shredded mozzarella
-
¼ cup grated Parmesan
-
1 tbsp olive oil or butter
-
1 tsp Italian seasoning
-
½ tsp paprika
-
Salt & pepper to taste
⭐ Instructions
1️⃣ Prep the Chicken

Preheat oven to 400°F (200°C).

Season chicken with salt, pepper, paprika, and Italian seasoning.

Heat oil in a skillet and sear chicken for 2–3 minutes per side (just to get color).

Transfer chicken to a baking dish.
2️⃣ Sauté the Veggies

In the same skillet, sauté onions and mushrooms until soft.

Add garlic and cook 30 seconds.

Add spinach and cook until just wilted.
3️⃣ Make the Creamy Sauce

Pour in heavy cream + chicken broth.

Stir in Parmesan and a handful of mozzarella.

Simmer 2–3 minutes until slightly thickened.
4️⃣ Combine & Bake

Pour the creamy mushroom–spinach sauce over the chicken in the baking dish.

Top with remaining mozzarella.

Bake 20–25 minutes, until bubbly and chicken is cooked through.
5️⃣ Serve

Garnish with extra Parmesan, fresh parsley, or chili flakes.
