Chicken Spinach & Mushroom Low-Carb Oven Dish

Ingredients

  • 2–3 chicken breasts, sliced or cubed

  • 2 cups fresh spinach

  • 8 oz mushrooms, sliced

  • 1 small onion, diced (optional)

  • 3–4 garlic cloves, minced

  • 1 cup heavy cream (or half-and-half for lighter)

  • ½ cup chicken broth

  • ½ cup shredded mozzarella

  • ¼ cup grated Parmesan

  • 1 tbsp olive oil or butter

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt & pepper to taste


Instructions

1️⃣ Prep the Chicken

  • Preheat oven to 400°F (200°C).

  • Season chicken with salt, pepper, paprika, and Italian seasoning.

  • Heat oil in a skillet and sear chicken for 2–3 minutes per side (just to get color).

  • Transfer chicken to a baking dish.

2️⃣ Sauté the Veggies

  • In the same skillet, sauté onions and mushrooms until soft.

  • Add garlic and cook 30 seconds.

  • Add spinach and cook until just wilted.

3️⃣ Make the Creamy Sauce

  • Pour in heavy cream + chicken broth.

  • Stir in Parmesan and a handful of mozzarella.

  • Simmer 2–3 minutes until slightly thickened.

4️⃣ Combine & Bake

  • Pour the creamy mushroom–spinach sauce over the chicken in the baking dish.

  • Top with remaining mozzarella.

  • Bake 20–25 minutes, until bubbly and chicken is cooked through.

5️⃣ Serve

  • Garnish with extra Parmesan, fresh parsley, or chili flakes.
