Soft, protein-packed, and unbelievably fluffy! These egg bites are blended with cottage cheese for a creamy texture and baked to perfection. Ideal for quick breakfasts, snacks, and meal prep—better than Starbucks, and way healthier!


📝 Ingredients (Makes 8–10 bites)

  • 6 large eggs

  • 1 cup cottage cheese

  • ½ cup shredded cheese (cheddar, mozzarella, or Swiss)

  • ½ cup finely chopped veggies (spinach, peppers, onions, mushrooms)

  • Salt & pepper to taste

  • Optional: paprika, garlic powder, chili flakes, parsley


🍳 Instructions

  1. Preheat oven to 350°F (175°C).

  2. Add eggs, cottage cheese, shredded cheese, salt, pepper + seasoning into a blender.

  3. Blend until smooth and creamy.

  4. Stir in chopped veggies (don’t blend the veggies!).

  5. Grease a muffin tin or use silicone molds.

  6. Pour mixture in, filling each cup about ¾ full.

  7. Bake 20–22 minutes, or until set and slightly golden on top.

  8. Let cool for 5 minutes and enjoy warm — or refrigerate for meal prep!
