Crispy Cheesy Chicken Fritters

Ingredients

1 lb (450 g) chicken breast, finely diced or minced

1 cup shredded cheese (mozzarella, cheddar, or a mix)

1 large egg
-
3 tbsp mayonnaise or Greek yogurt

3 tbsp flour (or cornstarch for extra crisp)

2 cloves garlic, minced
-
1 tbsp fresh dill or parsley, chopped (optional but great)

½ tsp salt
-
½ tsp black pepper
-
½ tsp paprika
-
½ tsp onion powder (optional)

Oil for frying
Instructions

Mix the batter
In a bowl, combine chicken, cheese, egg, mayo, flour, garlic, herbs, salt, pepper, and spices.
Mix until thick and scoopable. -
Heat the pan
Heat a skillet over medium heat with enough oil to lightly coat the bottom. -
Form fritters
Spoon 2–3 tbsp of mixture per fritter into the pan.
Gently flatten slightly. -
Cook
Fry 3–4 minutes per side, until deep golden and cooked through. -
Drain & rest
Transfer to paper towels. Let rest 1–2 minutes (they firm up beautifully).
Optional Oven Finish (Extra Cheesy)

Transfer cooked fritters to a baking sheet

Sprinkle extra cheese on top

Broil 2–3 minutes until bubbly
