Crispy Cheesy Chicken Fritters

8–10 fritters

Ingredients

  • 1 lb (450 g) chicken breast, finely diced or minced

  • 1 cup shredded cheese (mozzarella, cheddar, or a mix)

  • 1 large egg

  • 3 tbsp mayonnaise or Greek yogurt

  • 3 tbsp flour (or cornstarch for extra crisp)

  • 2 cloves garlic, minced

  • 1 tbsp fresh dill or parsley, chopped (optional but great)

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • ½ tsp onion powder (optional)

  • Oil for frying


Instructions

  1. Mix the batter
    In a bowl, combine chicken, cheese, egg, mayo, flour, garlic, herbs, salt, pepper, and spices.
    Mix until thick and scoopable.

  2. Heat the pan
    Heat a skillet over medium heat with enough oil to lightly coat the bottom.

  3. Form fritters
    Spoon 2–3 tbsp of mixture per fritter into the pan.
    Gently flatten slightly.

  4. Cook
    Fry 3–4 minutes per side, until deep golden and cooked through.

  5. Drain & rest
    Transfer to paper towels. Let rest 1–2 minutes (they firm up beautifully).


Optional Oven Finish (Extra Cheesy)

  • Transfer cooked fritters to a baking sheet

  • Sprinkle extra cheese on top

  • Broil 2–3 minutes until bubbly


Pro Tips

  • Smaller dice = juicier fritters

  • Cornstarch makes them extra crispy

  • Don’t overcrowd the pan—crisp needs space
