Ingredients (Serves 3–4)

2 lbs (900 g) potatoes
(Yukon Gold or red potatoes work best) -
1 large onion, thinly sliced

Step-by-Step Instructions
1. Prep the Potatoes

Wash and scrub potatoes well (peel if you prefer).

Slice into ½-inch thick rounds or chunks.

Place in cold salted water for 15–20 minutes.

This removes excess starch = crispier potatoes.

Drain and pat very dry with a kitchen towel.
⚠️ Moisture is the enemy of crispiness—dry them well.
2. Pre-Cook (Optional but Recommended)
This ensures soft centers.
Option A: Boil

Boil potatoes in salted water for 6–8 minutes until just fork-tender.

Drain and let steam-dry 5 minutes.
Option B: Microwave

Microwave potatoes with a splash of water, covered, 5–6 minutes.

3. Fry the Potatoes

Heat a large skillet over medium-high heat.
