🌶️🧀 Fajita Chicken Casserole Recipe

âś… Ingredients:

For the Chicken & Veggies:

  • 2 large chicken breasts (or thighs), cooked and shredded or cubed

  • 1 tablespoon olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 small red onion, sliced

  • 1 teaspoon chili powder

  • 1 teaspoon paprika

  • 1 teaspoon cumin

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt and pepper to taste

For the Creamy Mixture:

  • 4 oz (½ block) cream cheese, softened

  • ½ cup sour cream

  • ½ cup salsa (or canned diced tomatoes with green chilies)

  • 1½ cups shredded Mexican blend or cheddar cheese (divided)

  • Juice of ½ lime (optional for brightness)

Optional Toppings:

  • Fresh cilantro

  • Sliced jalapeños

  • Avocado slices or guacamole

  • Green onions


🔥 Instructions:

1. Preheat Oven

  • Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.

2. Sauté the Veggies

  • In a skillet over medium heat, add olive oil. SautĂ© bell peppers and onions for 5–6 minutes until slightly softened.

  • Add chili powder, paprika, cumin, garlic powder, onion powder, salt, and pepper. Stir well and cook for another 1–2 minutes. Remove from heat.

3. Make the Creamy Base

  • In a large bowl, combine:

    • Cream cheese (softened)

    • Sour cream

    • Salsa (or tomatoes)

    • Half of the shredded cheese (Âľ cup)

    • Lime juice (if using)

  • Mix until smooth and creamy.

4. Combine Everything

  • Add shredded/cooked chicken and sautĂ©ed peppers/onions to the creamy mixture. Mix until well combined.

5. Bake

  • Spread the mixture into the prepared baking dish.

  • Top with remaining shredded cheese.

  • Bake uncovered for 20–25 minutes, or until bubbly and golden around the edges.

6. Garnish & Serve

  • Let cool slightly before serving.

  • Top with cilantro, jalapeños, or avocado if desired.

  • Serve alone, over rice, in tortillas, or with tortilla chips!

  • Shortcut: Use rotisserie chicken to save time.

  • Low-Carb/Keto: Serve as-is or with cauliflower rice.

  • Add Rice or Beans: Mix 1 cup cooked rice or black beans into the casserole before baking for a more filling version.
