Garlic-Sautéed Broccoli Stems (Fast & Delicious)

Ingredients

  • Broccoli stems, peeled and sliced

  • 1–2 tbsp olive oil

  • 2 cloves garlic, minced

  • Salt & black pepper

  • Optional: chili flakes, soy sauce, lemon

Instructions

  1. Peel the tough outer layer (important!)

  2. Slice stems into coins or matchsticks

  3. Heat oil in a pan over medium heat

  4. Add garlic → sauté 30 seconds

  5. Add stems, salt & pepper

  6. Cook 5–7 minutes until tender-crisp

  7. Finish with lemon juice or a splash of soy sauce

👉 Great as a side dish or tossed into rice/noodles.


Creamy Broccoli Stem Soup (Zero-Waste)

Ingredients

  • Broccoli stems, chopped

  • 1 small onion

  • 1 potato (for creaminess)

  • 2 cups vegetable or chicken stock

  • Salt & pepper

  • Cream or milk (optional)

Instructions

  1. Sauté onion in oil until soft

  2. Add stems + potato, cook 3 minutes

  3. Add stock, simmer 15–20 minutes

  4. Blend until smooth

  5. Finish with cream, salt & pepper


Crunchy Broccoli Stem Slaw (Fresh!)

  • Julienne peeled stems

  • Add carrots, apple, or cabbage

  • Toss with lemon juice, olive oil, salt

  • Optional yogurt or mayo dressing

  • Always peel first — the inside is tender
