Garlicky Mushroom & Greens Stir-Fry

Serves: 2–3
Time: ~20 minutes

Ingredients

  • 2 tbsp olive oil or avocado oil

  • 8 oz mushrooms (cremini or button), sliced

  • 1 bunch broccolini (or broccoli rabe), trimmed

  • 1 medium carrot, thinly sliced

  • ½ large onion, sliced

  • 2 cloves garlic, minced

  • 1–2 dried red chilies or ½ tsp chili flakes (to taste)

  • 2 tbsp soy sauce (or tamari)

  • 1 tbsp oyster sauce or hoisin sauce

  • 1 tsp sesame oil

  • Salt & black pepper, to taste

  • Optional: splash of water or veggie broth

Optional Garnish

  • Chopped parsley or scallions

  • Sesame seeds


Instructions

  1. Prep the veggies
    Slice everything before you start—this moves fast once the pan is hot.

  2. Sauté the mushrooms
    Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
    Add mushrooms in a single layer and let them brown undisturbed for 2–3 minutes. Stir and cook until golden and slightly crispy. Remove and set aside.

  3. Cook aromatics & veggies
    Add remaining oil. Toss in onions and carrots; cook 2–3 minutes until softened.
    Add garlic and chili flakes and stir for 30 seconds until fragrant.

  4. Add the greens
    Add broccolini and a splash of water or broth. Cover and steam for 1–2 minutes until bright green and tender-crisp.

  5. Bring it together
    Return mushrooms to the pan. Add soy sauce, oyster (or hoisin) sauce, and sesame oil.
    Toss everything well and cook another 1–2 minutes.

  6. Finish & serve
    Taste and adjust seasoning. Garnish if you like.
