🍗 Grilled Mediterranean Chicken

Ingredients

  • 700 g boneless chicken thighs or breasts

  • 3 tbsp olive oil

  • Juice of 1 lemon

  • 4 garlic cloves, minced

  • 1 tsp paprika

  • 1 tsp oregano

  • ½ tsp cumin

  • ½ tsp black pepper

  • 1 tsp salt

  • ½ tsp chili flakes (optional)

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, paprika, oregano, cumin, salt, pepper, and chili flakes.

  2. Add chicken and marinate for at least 30 minutes (2–4 hours best).

  3. Heat a grill pan or skillet on medium-high.

  4. Grill chicken 5–6 minutes per side until charred and fully cooked.

  5. Rest for 5 minutes, then slice.


🍚 Lemon Herb Rice

Ingredients

  • 1½ cups basmati or long-grain rice

  • 3 cups water or chicken broth

  • 1 tbsp olive oil or butter

  • Zest of 1 lemon

  • Juice of ½ lemon

  • ½ tsp salt

  • 2 tbsp fresh dill or parsley, chopped

Instructions

  1. Rinse rice well.

  2. Bring water/broth to a boil, add rice, oil, and salt.

  3. Cover and simmer 12–15 minutes until fluffy.

  4. Stir in lemon zest, lemon juice, and herbs.


🥣 Creamy Tzatziki Sauce

Ingredients

  • 1 cup thick Greek yogurt

  • ½ cup grated cucumber (seeds removed)

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 garlic clove, grated

  • Salt to taste

  • Fresh dill or mint, chopped

Instructions

  1. Squeeze excess water from cucumber.

  2. Mix all ingredients until smooth.

  3. Chill for 15–20 minutes for best flavor.


🥗 Fresh Mediterranean Salad

Ingredients

  • Chopped cucumber

  • Cherry tomatoes, halved

  • Red onion, finely chopped

  • Olive oil & lemon juice

  • Salt, pepper, oregano

Mix all ingredients lightly.


🧀 Extras

  • Crumbled feta cheese

  • Warm pita or naan bread

  • Lemon wedges


🥙 Bowl Assembly

  1. Add lemon rice to the bowl.

  2. Top with sliced grilled chicken.

  3. Add salad on the side.

  4. Spoon tzatziki generously.

  5. Sprinkle feta and herbs.

  6. Serve with warm pita.


⭐ Tips

  • Chicken thighs give juicier results

  • Add olives for extra Mediterranean flavor

  • Make it anti-inflammatory by using olive oil, garlic, lemon, yogurt, and herbs
