🍗 Grilled Mediterranean Chicken
Ingredients

700 g boneless chicken thighs or breasts

3 tbsp olive oil

Juice of 1 lemon

4 garlic cloves, minced

1 tsp paprika

1 tsp oregano
-
½ tsp cumin

½ tsp black pepper

1 tsp salt

½ tsp chili flakes (optional)
Instructions

In a bowl, mix olive oil, lemon juice, garlic, paprika, oregano, cumin, salt, pepper, and chili flakes.

Add chicken and marinate for at least 30 minutes (2–4 hours best).

Heat a grill pan or skillet on medium-high.

Grill chicken 5–6 minutes per side until charred and fully cooked.

Rest for 5 minutes, then slice.
🍚 Lemon Herb Rice
Ingredients

1½ cups basmati or long-grain rice
-
3 cups water or chicken broth
-
1 tbsp olive oil or butter
-
Zest of 1 lemon
-
Juice of ½ lemon
-
½ tsp salt
-
2 tbsp fresh dill or parsley, chopped
Instructions

Rinse rice well.

Bring water/broth to a boil, add rice, oil, and salt.

Cover and simmer 12–15 minutes until fluffy.

Stir in lemon zest, lemon juice, and herbs.
🥣 Creamy Tzatziki Sauce
Ingredients

1 cup thick Greek yogurt

½ cup grated cucumber (seeds removed)

1 tbsp olive oil
-
1 tbsp lemon juice

1 garlic clove, grated
-
Salt to taste

Fresh dill or mint, chopped
Instructions

Squeeze excess water from cucumber.

Mix all ingredients until smooth.

Mix all ingredients lightly.
