Ground Beef & Vegetable Skillet

Ingredients

  • 500 g (1 lb) ground beef

  • 1 medium sweet potato, diced small

  • 1 zucchini, diced

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tsp paprika

  • ½ tsp ground cumin

  • ½ tsp black pepper

  • 1 tsp salt (adjust to taste)

  • ½ tsp chili flakes (optional)

  • 2 tbsp fresh parsley or cilantro, chopped

Instructions

  1. Cook sweet potatoes

    • Heat 1 tbsp olive oil in a large skillet over medium heat.

    • Add diced sweet potatoes and cook 6–8 minutes, stirring, until tender and lightly golden.

    • Remove from pan and set aside.

  2. Brown the beef

    • Add remaining oil to the skillet.

    • Add onion and cook 2 minutes until soft.

    • Add garlic, cook 30 seconds.

    • Add ground beef and cook until browned, breaking it apart.

  3. Season

    • Stir in paprika, cumin, salt, pepper, and chili flakes.

    • Cook 1–2 minutes to bloom spices.

  4. Add vegetables

    • Add zucchini and cooked sweet potatoes back to the pan.

    • Cook 4–5 minutes until zucchini is tender but not mushy.

  5. Finish

    • Taste and adjust seasoning.

    • Sprinkle with fresh parsley or cilantro before serving.

Serving Ideas

  • Serve as-is for a low-carb meal

  • Spoon over rice or quinoa

  • Wrap in tortillas or lettuce cups

  • Top with a fried egg or yogurt sauce 😋

Tips

  • Swap beef for ground turkey or chicken if you like.

  • Add a splash of soy sauce or Worcestershire for deeper flavor.
