Healthy Tomato Zucchini Pasta

Ingredients

  • 2 medium zucchinis, diced or spiralized

  • 2 cups cherry tomatoes (or 2 large tomatoes), halved

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • ½ tsp Italian seasoning

  • ¼ tsp chili flakes (optional)

  • Salt & black pepper to taste

  • 8 oz whole-wheat or regular pasta (your choice)

  • ¼ cup pasta water (reserved)

  • Fresh basil, for topping

  • Grated parmesan (optional)


Instructions

1. Cook the Pasta

  • Boil pasta according to package instructions.

  • Reserve ¼ cup pasta water, then drain.

2. Cook the Veggies

  • Heat olive oil in a skillet.

  • Add garlic and sauté 30 seconds.

  • Add cherry tomatoes and cook 3–4 minutes until softened.

  • Add diced zucchini and cook another 4–5 minutes until tender.

  • Season with salt, pepper, Italian seasoning, and chili flakes.

3. Combine

  • Add cooked pasta into the skillet.

  • Pour in a splash of the reserved pasta water to help create a light sauce.

  • Toss well to coat.

4. Finish

  • Add fresh basil and a sprinkle of parmesan if desired.

  • Serve warm!
