Hot Honey Stuffed Sweet Potatoes (Upgraded High-Protein Version)

Ingredients (Serves 1–2)

  • 1 large sweet potato

  • 4–5 oz lean ground beef (93% lean)

  • ½ cup cottage cheese

  • ½ avocado, sliced or diced

  • 1–2 tbsp hot honey

  • ½ tsp paprika

  • ½ tsp garlic powder

  • Salt & pepper to taste

  • Optional toppings: green onions, chili flakes, lime, cilantro


Instructions

1. Bake or Air Fry the Sweet Potato

  • Bake: 400°F (200°C) for 40–50 min

  • Air fry: 390°F (200°C) for 30–35 min
    Cook until soft and fluffy inside.


2. Cook the Beef

  • Brown lean ground beef in a skillet.

  • Season with salt, pepper, paprika, and garlic powder.

  • Cook until no longer pink.


3. Stuff the Sweet Potato

Slice the sweet potato open and fluff the inside with a fork.
Layer in this order:

  1. Spoon in cooked seasoned beef

  2. Add a generous scoop of cottage cheese

  3. Top with avocado

  4. Drizzle with hot honey

  5. Finish with green onions, chili flakes, or cilantro if you like
