Mandarin Orange Fluff Salad
What it tastes like
Fluffy and creamy with juicy pops of sweet mandarin orange. Lightly tangy, not overly sweet—perfect as a dessert or a side dish.
🛒 Ingredients (serves 6–8)
2 cups small-curd cottage cheese (full-fat recommended for best texture)
1 (8 oz / 225 g) tub whipped topping (Cool Whip or homemade stabilized whipped cream)
2 cans (11 oz / 300 g each) mandarin oranges, drained very well
½ cup mini marshmallows (optional but classic)
2–4 tbsp powdered sugar or honey (to taste)
1 tsp vanilla extract (optional but lovely)
Pinch of salt (sounds odd—makes flavors pop!)
🥣 Instructions
1. Drain the oranges
This is key.
Drain the mandarin oranges in a colander.
Gently pat them dry with paper towels.
Too much liquid = runny fluff.
2. Prepare the creamy base
In a large mixing bowl:
Add the cottage cheese
Stir in powdered sugar (or honey), vanilla, and a pinch of salt
Mix until smooth-ish (it’s okay if curds remain—matches the photo)
👉 Optional: If you want it ultra-smooth, briefly pulse the cottage cheese in a blender before mixing.
3. Fold in whipped topping
Gently fold in the whipped topping
Use a spatula and light motions to keep it fluffy
4. Add oranges & marshmallows
Fold in the mandarin oranges
Add mini marshmallows if using
Mix gently so the oranges stay intact
5. Chill
Cover and refrigerate at least 1 hour
Best texture after 2–4 hours

✨ Variations (if you want to riff)
Cream cheese version: Replace 1 cup cottage cheese with 4 oz softened cream cheese (extra rich)
