Mediterranean Baked Salmon with Feta

🔥 Instructions

1. Prep the salmon

  • Preheat oven to 400°F (200°C).

  • Place salmon fillets on a baking dish.

  • Drizzle with olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper.

  • Rub seasoning all over the fillets.

2. Make the Mediterranean topping

  • In a bowl, combine tomatoes, red onion, olives, parsley/basil, feta, olive oil, lemon juice, and oregano.

  • Mix lightly so tomatoes don’t break down.

3. Assemble
