Mediterranean Chicken Zucchini Bake
Ingredients

2 chicken breasts, cubed

2 medium zucchinis, sliced or cubed

1 small red onion, sliced

1 cup cherry tomatoes (or diced tomatoes)

3–4 garlic cloves, minced

2 tbsp olive oil
-
1 tsp oregano
-
1 tsp paprika
-
½ tsp cumin (optional)
-
½ tsp black pepper
-
½ tsp salt (adjust to taste)

½ tsp chili flakes (optional)

Juice of ½ lemon
-
¼ cup feta cheese, crumbled
-
Fresh parsley or basil for topping
Instructions
1. Prep the Chicken

In a bowl, combine cubed chicken with olive oil, garlic, oregano, paprika, salt, pepper, chili flakes, cumin, and lemon juice.

Mix well and marinate for 10–15 minutes (longer = more flavor).
2. Prepare the Veggies
-
In a baking dish, add zucchini, cherry tomatoes, and red onion.

Drizzle with a little olive oil and season lightly with salt & pepper.
3. Add the Chicken

Spread the marinated chicken evenly over the vegetables in the baking dish.
4. Bake
-
Bake at 400°F (200°C) for 25–30 minutes, or until chicken is cooked and vegetables are tender.
5. Finish with Feta
-
Remove from oven and sprinkle crumbled feta on top.

Bake for another 3–5 minutes just to warm the feta slightly.
6. Garnish & Serve
-
Top with fresh parsley or basil.
