🧾 Ingredients (1–2 sandwiches)

4 slices whole-grain or sourdough bread

½ cup mozzarella, shredded

¼ cup crumbled feta

4–6 slices tomato

6–8 slices cucumber (optional)

6–8 kalamata olives, sliced

A few spinach or basil leaves

1 tbsp olive oil or butter

½ tsp oregano

½ tsp garlic powder

Pinch of black pepper

Optional: roasted red peppers, sun-dried tomatoes, pesto
👩🍳 Instructions
1️⃣ Prepare the Filling
In a small bowl, mix mozzarella, feta, oregano, garlic powder, and pepper.
2️⃣ Build the Sandwich
Layer on bread:
Cheese mixture → tomatoes → olives → spinach/basil → top with cheese → 2nd slice of bread.
3️⃣ Grill It
Brush the outside of bread with olive oil or butter.
Heat a pan on medium.
Cook 3–4 minutes per side until:
