Mediterranean Grilled Cheese Sandwich

A golden, crispy grilled cheese filled with feta, mozzarella, tomatoes, olives, herbs, and a drizzle of olive oil — perfectly melty and bursting with Mediterranean flavor!


🧾 Ingredients (1–2 sandwiches)

  • 4 slices whole-grain or sourdough bread

  • ½ cup mozzarella, shredded

  • ¼ cup crumbled feta

  • 4–6 slices tomato

  • 6–8 slices cucumber (optional)

  • 6–8 kalamata olives, sliced

  • A few spinach or basil leaves

  • 1 tbsp olive oil or butter

  • ½ tsp oregano

  • ½ tsp garlic powder

  • Pinch of black pepper

  • Optional: roasted red peppers, sun-dried tomatoes, pesto


👩‍🍳 Instructions

1️⃣ Prepare the Filling

In a small bowl, mix mozzarella, feta, oregano, garlic powder, and pepper.

2️⃣ Build the Sandwich

Layer on bread:
Cheese mixture → tomatoes → olives → spinach/basil → top with cheese → 2nd slice of bread.

3️⃣ Grill It

Brush the outside of bread with olive oil or butter.
Heat a pan on medium.
Cook 3–4 minutes per side until:
✔ Crispy
✔ Golden
✔ Cheese fully melted

4️⃣ Serve

Slice and enjoy with tzatziki, tomato soup, or a fresh salad!
