Mediterranean Spinach and Feta Crisps

Crispy, golden pastry filled with a savory mix of spinach, herbs, and creamy feta — inspired by Greek spanakopita but faster and easier!


Ingredients (Makes 8–10 Crisps)

Filling

  • 1 cup fresh spinach, chopped (or ½ cup frozen, thawed & squeezed dry)

  • ½ cup crumbled feta cheese

  • 2 tbsp cream cheese or ricotta (optional for creamier filling)

  • 1 small onion, finely chopped

  • 1 clove garlic, minced

  • 1 tbsp olive oil

  • 1 tbsp fresh dill or parsley, chopped

  • Salt & pepper to taste

  • Pinch of chili flakes (optional)

For the Crisps

  • 1 sheet puff pastry or 6–8 phyllo sheets

  • 1 egg (for egg wash)

  • Sesame seeds or nigella seeds for topping (optional)

Step 1 — Prepare the Filling

  1. Heat olive oil in a pan.

  2. Add chopped onion and sauté 2–3 minutes.

  3. Add garlic and cook for 30 seconds.

  4. Add spinach and cook until wilted (1–2 minutes).

  5. Turn off heat and cool slightly.

  6. Mix in feta, cream cheese (optional), herbs, salt, pepper, and chili flakes.


Step 2 — Assemble the Crisps

If using puff pastry:

  1. Roll out the sheet lightly and cut into squares.

  2. Add 1–2 tbsp of spinach-feta filling in the center.

  3. Fold into triangles or rectangles.

  4. Seal edges with a fork.

If using phyllo sheets:

  1. Brush each sheet lightly with oil or melted butter.

  2. Stack 2–3 sheets for each crisp.

  3. Add filling and fold into triangles.


Step 3 — Bake

  1. Preheat oven to 400°F (200°C).

  2. Place crisps on a lined baking sheet.

  3. Brush tops with egg wash.

  4. Sprinkle sesame or nigella seeds if desired.

  5. Bake 15–20 minutes or until golden and crisp.
