Steak & Shrimp Stuffed Bell Peppers

🛒 Ingredients
For the peppers

4 large bell peppers (red, yellow, or green)

1 tbsp olive oil
-
Salt & pepper
For the steak filling
-
350–450 g (¾–1 lb) steak (sirloin, ribeye, or strip)

1 tbsp olive oil
-
1 small onion, finely diced
-
2 cloves garlic, minced
-
1 tsp smoked paprika
-
½ tsp black pepper
-
¾ tsp salt
-
Optional: ½ tsp chili flakes
For the shrimp
-
12–16 large shrimp, peeled & deveined
-
1 tbsp butter or olive oil
-
1 tsp paprika
-
½ tsp garlic powder
-
Salt & pepper
Cheese & topping
-
1½ cups shredded mozzarella (or Monterey Jack)
-
½ cup shredded parmesan (optional but 🔥)

2 tbsp fresh parsley, chopped
🔪 Prep Work
1. Prep the peppers

Cut tops off peppers and remove seeds/membranes.

Brush lightly with olive oil.

Sprinkle inside with salt & pepper.
-
Place upright in a baking dish.

🥩 Cook the Steak Filling
2. Sear the steak

Pat steak dry.

Season with salt & pepper.

Heat pan over high heat with olive oil.

Sear steak 2–3 min per side (medium-rare is perfect).

Rest 5 minutes, then dice into small cubes.
3. Build the filling

In same pan, reduce heat to medium.

Add diced onion → sauté 3–4 min until soft.

Add garlic → cook 30 seconds.
-
Add diced steak + smoked paprika + chili flakes.

Toss everything together for 1–2 minutes.

Taste and adjust seasoning.
Remove from heat.
🍤 Cook the Shrimp
4. Shrimp magic

Toss shrimp with paprika, garlic powder, salt & pepper.

Heat butter/oil in pan over medium-high.
-
Cook shrimp 1–2 min per side until pink and lightly charred.

Set aside.
Do NOT overcook—shrimp finish in the oven.
🧀 Assemble
5. Stuff the peppers

Spoon steak mixture into peppers (pack gently).
-
Top with shredded mozzarella + parmesan.
-
Place shrimp on top (2–4 per pepper).
🔥 Bake
6. Oven time

Preheat oven to 190°C / 375°F
-
Cover loosely with foil.

Bake 25 minutes
-
Remove foil and bake another 10–15 minutes
until cheese is melted, bubbly, and lightly golden.
Optional:

Broil 2–3 minutes for extra color (watch closely!).

Sprinkle with fresh parsley.
