🧾 Ingredients

Steak

  • 1 thick-cut prime rib steak or ribeye (1½–2 inches thick)

  • 1½ tsp kosher salt

  • 1 tsp freshly ground black pepper

  • 1 tsp garlic powder

  • 1 tsp fresh rosemary or thyme (optional)

  • 2 tbsp olive oil

  • 2 tbsp butter


Asparagus

  • 1 bunch asparagus, ends trimmed

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • Optional: minced garlic or bacon bits


Loaded Baked Potato

  • 1 large russet potato

  • Olive oil

  • Salt

  • 2 tbsp butter

  • 2–3 tbsp sour cream

  • Crispy bacon bits

  • Optional: shredded cheddar or chives

🥔 Step 1: Bake the Potato

  1. Preheat oven to 200°C / 400°F

  2. Scrub potato clean, pat dry.

  3. Rub with olive oil and sprinkle with salt.

  4. Place directly on oven rack.

  5. Bake 50–60 minutes until soft inside.

  6. Once done, slice open, fluff with a fork, add butter, sour cream, and bacon.

(Keep warm while steak cooks.)


🥩 Step 2: Prepare the Steak

  1. Remove steak from fridge 30 minutes before cooking.

  2. Pat dry thoroughly.

  3. Season generously with salt, pepper, garlic powder, and herbs.


🔥 Step 3: Sear & Finish the Steak

  1. Heat a heavy skillet (cast iron preferred) over high heat.

  2. Add olive oil.

  3. Sear steak 3–4 minutes per side until deep brown crust forms.

  4. Add butter and herbs.

  5. Tilt pan and baste steak continuously for 1–2 minutes.

  6. Reduce heat to medium and cook until internal temp reaches:

    • Rare: 49–52°C / 120–125°F

    • Medium-rare: 54–57°C / 130–135°F (like the photo)

    • Medium: 60°C / 140°F

  7. Remove steak and rest 10 minutes (crucial!).


🌿 Step 4: Cook the Asparagus

Option A – Pan-seared (best match for photo):

  1. Heat olive oil in skillet over medium-high.

  2. Add asparagus, salt, and pepper.

  3. Sauté 5–7 minutes until tender with light char.

  4. Optional: add garlic or bacon bits in final minute.


🍽 Assembly

  • Slice steak thickly against the grain.

  • Plate with asparagus and loaded baked potato.

  • Spoon pan juices over steak for extra richness.
