Stuffed Pepper Soup — Easy & Hearty
Ingredients (4–5 servings)
Base

1 tbsp olive oil

1 medium onion, diced

3 garlic cloves, minced
-
450g (1 lb) ground beef or ground chicken
-
Salt & pepper, to taste
Vegetables

2 bell peppers (green + red), diced
-
1 can (400g) diced tomatoes
-
1 can (400g) tomato sauce OR passata
-
4 cups beef or chicken broth
Seasoning
-
1 tsp paprika
-
1 tsp dried oregano
-
½ tsp Italian seasoning (optional)
-
½ tsp chili flakes (optional)
-
1 tbsp tomato paste
Rice
-
1 cup cooked rice (white or brown)
OR ½ cup uncooked rice (added directly)
Optional toppings
-
Shredded cheese
-
Fresh parsley
-
Chili flakes
Instructions
1. Sauté

Heat oil in a pot.

Add onion and sauté 2–3 minutes.

Add garlic and cook 30 seconds.
2. Brown the Meat
-
Add ground beef.
-
Cook until browned.
-
Season with salt & pepper.
-
Drain excess fat if needed.
3. Add Peppers & Flavor
Add:
-
Diced bell peppers
-
Tomato paste
-
Paprika
-
Oregano
-
Italian seasoning
Cook 2 minutes.
4. Add Liquids
Pour in:

Diced tomatoes
-
Tomato sauce
-
Broth
Bring to a boil, then simmer 20 minutes.
5. Add Rice
Choose one method:
✔ For cooked rice:
Add at the end and simmer 5 minutes.
✔ For uncooked rice:
Add during simmer and cook 15–20 minutes until rice is soft.
Serve
Top with:

Shredded cheese
-
Fresh parsley
-
A pinch of chili flakes
