Ingredients (1 sandwich)

For the omelet

  • 3 large eggs

  • 1 tbsp milk or water

  • ½ tsp salt

  • ¼ tsp white or black pepper

  • 1 tbsp butter or neutral oil

For serving

  • 1–2 slices soft white sandwich bread (untoasted, like in the photo)

  • Small nonstick pan (8-inch / 20 cm works best)

  • Spatula

  • Bowl + fork or whisk


Step-by-Step Instructions

1. Prepare the egg mixture

Crack the eggs into a bowl.
Add milk, salt, and pepper.
Whisk gently until just combined — don’t over-whisk or it’ll turn airy instead of dense.

👉 The goal is a smooth, uniform yellow mixture.


2. Heat the pan

Place your pan over low to medium-low heat.
Add butter and let it melt completely without browning.

Low heat is key for that thick, uniform texture.


3. Cook the eggs

Pour the egg mixture into the pan.

Let it sit undisturbed for 30–45 seconds, until the bottom starts to set.

Using a spatula:

  • Gently push the cooked edges toward the center

  • Tilt the pan so uncooked egg flows into the gaps

Do this slowly — no scrambling.


4. Form the thick omelet

Once the eggs are mostly set but still slightly soft on top:

  • Fold the omelet in half

  • Then fold again into a square or rectangle

Press gently with the spatula to compact it.

Cook another 30–60 seconds per side until fully set and lightly golden.

You should end up with a thick, smooth egg block.


5. Assemble

Place the omelet directly onto the slice of white bread.
You can:

  • Leave it open-faced (like the photo)

  • Or add another slice on top

No sauce needed — this is minimalist comfort food.


Optional Tweaks (If You Want)

  • Richer flavor: add ½ tbsp cream instead of milk

  • More color: a pinch of turmeric (very subtle)
