Weight Watchers Egg Roll in a Bowl

Ingredients

  • 1 lb lean ground turkey or chicken (or lean beef)

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 bag (12–14 oz) coleslaw mix (cabbage + carrots)

  • 2–3 tbsp low-sodium soy sauce (or coconut aminos)

  • 1 tbsp rice vinegar

  • 1 tsp sesame oil

  • 1 tsp ground ginger

  • ½ tsp black pepper

  • Optional: chili flakes or sriracha for heat

  • Green onions, chopped (for topping)


Instructions

1. Cook the Meat

  • In a large skillet, brown the ground turkey/chicken over medium heat.

  • Add onion and garlic; sauté until softened.

2. Add the Veggies

  • Add the entire bag of coleslaw mix.

  • Stir and cook for 5–6 minutes, until cabbage softens.

3. Season

  • Add soy sauce, rice vinegar, sesame oil, ginger, and pepper.

  • Mix well and cook another 2–3 minutes.

4. Finish

  • Taste and adjust seasoning.

  • Top with chopped green onions.

  • Add chili flakes or a drizzle of sriracha (optional).

  • Low in points when using ultra-lean meat + minimal oil
    (Exact points depend on your plan.)


Serving Ideas

  • Eat as-is for low carb.

  • Serve over cauliflower rice or brown rice for more volume.
