Weight Watchers Egg Roll in a Bowl
Ingredients

1 lb lean ground turkey or chicken (or lean beef)

1 small onion, diced

3 cloves garlic, minced

1 bag (12–14 oz) coleslaw mix (cabbage + carrots)

2–3 tbsp low-sodium soy sauce (or coconut aminos)

1 tbsp rice vinegar
-
1 tsp sesame oil
-
1 tsp ground ginger
-
½ tsp black pepper
-
Optional: chili flakes or sriracha for heat

Green onions, chopped (for topping)
Instructions
1. Cook the Meat

In a large skillet, brown the ground turkey/chicken over medium heat.

Add onion and garlic; sauté until softened.
2. Add the Veggies

Add the entire bag of coleslaw mix.

Stir and cook for 5–6 minutes, until cabbage softens.
3. Season

Add soy sauce, rice vinegar, sesame oil, ginger, and pepper.

Mix well and cook another 2–3 minutes.
4. Finish

Taste and adjust seasoning.

Top with chopped green onions.

Add chili flakes or a drizzle of sriracha (optional).
