Weight Watchers Pumpkin Bread
Ingredients

1 cup canned pumpkin purée

2 large eggs

½ cup unsweetened applesauce

⅓ cup brown sugar (or sugar substitute like Monkfruit)

1 tsp vanilla extract

1 ½ cups all-purpose flour (or half whole-wheat)

1 tsp baking soda
-
½ tsp baking powder
-
1 ½ tsp cinnamon

½ tsp pumpkin pie spice (optional)

¼ tsp salt
Instructions
1. Preheat

Preheat oven to 350°F (175°C).

Grease a loaf pan or line with parchment.
2. Wet Ingredients
In a bowl, whisk together:

Pumpkin

Eggs
-
Applesauce
-
Brown sugar (or sweetener)
-
Vanilla
3. Dry Ingredients
In another bowl, mix:

Flour
-
Baking soda
-
Baking powder
-
Cinnamon
-
Pumpkin spice
-
Salt
4. Combine

Add dry ingredients into the wet mixture.

Stir gently until just combined — do not overmix.
5. Bake

Pour batter into loaf pan.

Bake 45–55 minutes or until a toothpick comes out clean.

Cool for at least 15 minutes before slicing.
