Spinach & Feta Egg Muffins (Quick & Easy)
Ingredients (Makes 8–10 muffins)

8 large eggs

½ cup milk (or cream)
-
1 cup fresh spinach, chopped
-
½ cup feta cheese, crumbled
-
¼ cup onion, finely chopped (optional)
-
1 small bell pepper, finely diced (optional)
-
Salt & pepper, to taste
-
½ tsp garlic powder
-
½ tsp oregano
-
1–2 tbsp olive oil or butter (for greasing)
Instructions
1. Prep the Muffin Tin

Preheat oven to 180°C (350°F).

Grease the muffin tray with oil or butter.
2. Whisk the Eggs
In a large bowl:

Whisk eggs + milk
-
Add salt, pepper, garlic powder, oregano
3. Add Fillings
-
Stir in spinach, feta, onion, and bell pepper.

Mix well.
4. Fill the Cups
-
Pour mixture into each muffin slot (about ¾ full).
5. Bake
-
Bake for 18–22 minutes, until puffed and set.

Let cool slightly before removing.
