Spinach & Feta Egg Muffins (Quick & Easy)

Ingredients (Makes 8–10 muffins)

  • 8 large eggs

  • ½ cup milk (or cream)

  • 1 cup fresh spinach, chopped

  • ½ cup feta cheese, crumbled

  • ¼ cup onion, finely chopped (optional)

  • 1 small bell pepper, finely diced (optional)

  • Salt & pepper, to taste

  • ½ tsp garlic powder

  • ½ tsp oregano

  • 1–2 tbsp olive oil or butter (for greasing)


Instructions

1. Prep the Muffin Tin

  • Preheat oven to 180°C (350°F).

  • Grease the muffin tray with oil or butter.

2. Whisk the Eggs

In a large bowl:

  • Whisk eggs + milk

  • Add salt, pepper, garlic powder, oregano

3. Add Fillings

  • Stir in spinach, feta, onion, and bell pepper.

  • Mix well.

4. Fill the Cups

  • Pour mixture into each muffin slot (about ¾ full).

5. Bake

  • Bake for 18–22 minutes, until puffed and set.

  • Let cool slightly before removing.


Serve With

  • Toast

  • Avocado

  • Salsa

  • Greek yogurt

  • Hot sauce
