Weight Watchers Pumpkin Bread

Ingredients

  • 1 cup canned pumpkin purée

  • 2 large eggs

  • ½ cup unsweetened applesauce

  • ⅓ cup brown sugar (or sugar substitute like Monkfruit)

  • 1 tsp vanilla extract

  • 1 ½ cups all-purpose flour (or half whole-wheat)

  • 1 tsp baking soda

  • ½ tsp baking powder

  • 1 ½ tsp cinnamon

  • ½ tsp pumpkin pie spice (optional)

  • ¼ tsp salt


Instructions

1. Preheat

  • Preheat oven to 350°F (175°C).

  • Grease a loaf pan or line with parchment.


2. Wet Ingredients

In a bowl, whisk together:

  • Pumpkin

  • Eggs

  • Applesauce

  • Brown sugar (or sweetener)

  • Vanilla


3. Dry Ingredients

In another bowl, mix:

  • Flour

  • Baking soda

  • Baking powder

  • Cinnamon

  • Pumpkin spice

  • Salt


4. Combine

  • Add dry ingredients into the wet mixture.

  • Stir gently until just combined — do not overmix.


5. Bake

  • Pour batter into loaf pan.

  • Bake 45–55 minutes or until a toothpick comes out clean.

  • Cool for at least 15 minutes before slicing.


Weight Watchers Notes

  • Low in points when using applesauce instead of oil + low-cal sweetener.
    (Exact points depend on your WW plan.)


Optional Add-Ins (Point Changes May Apply)

  • ¼ cup chocolate chips

  • Chopped pecans or walnuts

  • Raisins

  • Light cream cheese swirl
