🧄 Ingredients

Base

  • 2–3 large flour tortillas (burrito size)

  • Olive oil or cooking spray

Taco Meat

  • 1 lb (450 g) ground beef

  • 1 packet taco seasoning
    or DIY:

    • 1 tsp chili powder

    • ½ tsp cumin

    • ½ tsp paprika

    • ½ tsp garlic powder

    • Salt & pepper to taste

  • ⅓ cup water

Sauce

  • ½–¾ cup enchilada sauce or thick salsa
    (optional upgrade: mix salsa + sour cream 2:1)

Cheese

  • 2–2½ cups shredded cheese

    • Cheddar, Mexican blend, or Colby-Jack

    • Optional: add mozzarella for extra stretch

Toppings (Fresh)

  • ½ cup diced tomatoes

  • ¼ cup red onion, finely diced

  • 1–2 jalapeños, sliced

  • Optional extras:

    • Black olives

    • Green onions

    • Cilantro

For Serving (Optional but Elite)

  • Sour cream

  • Guacamole

  • Hot sauce


🔥 Instructions

1. Cook the Taco Meat

  1. Heat a skillet over medium heat.

  2. Brown the ground beef, breaking it up.

  3. Drain excess grease.

  4. Add taco seasoning + water.

  5. Simmer 3–5 minutes until thick and saucy.

    • You want it moist, not runny.


2. Crisp the Tortillas

Oven method (recommended):

  1. Preheat oven to 400°F (205°C).

  2. Lightly brush tortillas with olive oil.

  3. Place directly on oven rack or baking sheet.

  4. Bake 3–5 minutes per side until lightly golden.

They should be firm but not cracker-hard.


3. Assemble the Pizza

  1. Place tortilla on a baking sheet or pizza pan.

  2. Spread a thin layer of enchilada sauce or salsa.

  3. Add a generous layer of taco meat.

  4. Cover with shredded cheese (don’t be shy).


4. Bake

  • Bake at 400°F (205°C) for 8–12 minutes

  • Cheese should be fully melted with light browning.


5. Finish with Fresh Toppings

Once out of the oven:

  • Sprinkle tomatoes, onion, and jalapeños on top

  • Let rest 2 minutes, then slice like pizza
