1. Cook the Taco Meat
Heat a skillet over medium heat.
Brown the ground beef, breaking it up.
Drain excess grease.
Add taco seasoning + water.
Simmer 3–5 minutes until thick and saucy.
You want it moist, not runny.
2. Crisp the Tortillas

Oven method (recommended):
Preheat oven to 400°F (205°C).
Lightly brush tortillas with olive oil.
Place directly on oven rack or baking sheet.
Bake 3–5 minutes per side until lightly golden.
They should be firm but not cracker-hard.
3. Assemble the Pizza
Place tortilla on a baking sheet or pizza pan.
Spread a thin layer of enchilada sauce or salsa.
Add a generous layer of taco meat.
Cover with shredded cheese (don’t be shy).
4. Bake
Bake at 400°F (205°C) for 8–12 minutes
Cheese should be fully melted with light browning.
5. Finish with Fresh Toppings
Once out of the oven:
Sprinkle tomatoes, onion, and jalapeños on top
Let rest 2 minutes, then slice like pizza
