Asparagus Stuffed Chicken Breast

Ingredients (4 servings)

  • 4 chicken breasts

  • 12–16 asparagus spears (3–4 per breast)

  • ½ cup mozzarella or provolone cheese (shredded or slices)

  • 2 tbsp olive oil

  • Salt & black pepper (to taste)

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp Italian seasoning

  • Toothpicks (to secure)

Optional additions

  • Lemon zest (for freshness)

  • Chili flakes (for heat)

  • Parmesan cheese (extra flavor)


Instructions

1. Prep the Chicken

  • Preheat oven to 400°F (200°C).

  • Slice each chicken breast lengthwise to create a pocket (don’t cut all the way through).

  • Season inside & outside with:

    • Salt

    • Pepper

    • Garlic powder

    • Paprika

    • Italian seasoning

2. Stuff the Chicken

Fill each pocket with:

  • 3–4 asparagus spears

  • A handful of mozzarella or provolone

  • Secure edges with toothpicks.

3. Sear (Optional but amazing)

  • Heat olive oil in a pan.

  • Sear stuffed chicken breasts for 2 minutes per side to add color.

4. Bake

  • Transfer to a baking dish.

  • Bake for 20–25 minutes until chicken is cooked through (juices clear).

5. Serve

Top with:

  • Lemon juice

  • Extra cheese (optional)

  • Fresh herbs

Pairs well with:

  • Mashed potatoes

  • Roasted veggies

  • Rice

  • Salad
