Dry Ingredients

  • 2 cups old-fashioned rolled oats

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • ¼ teaspoon salt

Wet Ingredients

  • 2 ripe bananas, mashed (about ¾ cup)

  • 2 large eggs

  • ⅓ cup milk (any kind works)

  • ¼ cup maple syrup or honey

  • 2 tablespoons melted butter or coconut oil

  • 1 teaspoon vanilla extract

Mix-Ins

  • ¾–1 cup blueberries (fresh or frozen)

  • Optional: ¼ cup chopped nuts or chocolate chips

Topping (Optional but recommended)

  • Honey or maple syrup, for drizzling


👩‍🍳 Instructions

1️⃣ Preheat & Prep

  • Preheat oven to 375°F (190°C).

  • Line an 8×8-inch baking dish with parchment paper (leave overhang for easy lifting).


2️⃣ Mix Dry Ingredients

In a large bowl, whisk together:

  • Oats

  • Baking powder

  • Cinnamon

  • Salt


3️⃣ Mix Wet Ingredients

In another bowl, whisk:

  • Mashed bananas

  • Eggs

  • Milk

  • Maple syrup or honey

  • Melted butter

  • Vanilla


4️⃣ Combine

  • Pour wet ingredients into dry.

  • Stir until fully combined.

  • Gently fold in blueberries (and any optional mix-ins).

The batter will be thick and spoonable.


5️⃣ Bake

  • Spread evenly in prepared pan.

  • Smooth the top.

  • Bake uncovered for 30–35 minutes, until:

    • Top is golden brown

    • Center is set

    • Edges pull slightly from the pan


6️⃣ Cool & Finish

  • Let cool for 10–15 minutes.

  • Lift out using parchment and slice.

  • Drizzle with warm honey or maple syrup just before serving.

  • For extra crispy edges, bake in a metal pan.

  • For softer, custardy texture, add 2–3 tablespoons extra milk.

  • Frozen blueberries? Toss them in 1 tsp oats first to prevent bleeding.
