Creamy vegetable soup

A cozy, rich, and velvety vegetable soup loaded with carrots, potatoes, celery, peas, and herbs — simmered in a creamy broth that feels like pure comfort in a bowl. Simple, nourishing, and perfect for busy weeknights!


🧾 Ingredients

  • 2 tbsp butter or olive oil

  • 1 onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 2 potatoes, diced

  • 3 garlic cloves, minced

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • Salt & pepper to taste

  • 4 cups vegetable or chicken broth

  • 1 cup milk or cream (or half-and-half)

  • 1 cup frozen peas or mixed veggies

  • 2 tbsp flour (for thickening)

  • Optional: spinach, corn, or broccoli


👩‍🍳 Instructions

1️⃣ Sauté

Heat butter/oil in a pot. Add onions, carrots, celery, and garlic. Cook 5 minutes until soft.

2️⃣ Add Potatoes & Seasoning

Stir in:

  • Potatoes

  • Salt, pepper

  • Thyme & oregano

Cook 2 minutes.

3️⃣ Add Broth & Simmer

4️⃣ Make It Creamy

Whisk 2 tbsp flour with milk until smooth. Add to pot.
Simmer 5–7 minutes until thick and creamy.

5️⃣ Finish With Veggies
