Hawaiian Chicken Sheet Pan

Ingredients

Chicken & Veggies

  • 2 chicken breasts or thighs, cut into chunks

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 red onion, sliced

  • 1 cup pineapple chunks (fresh or canned, drained)

  • 2 tbsp olive oil

  • Salt & pepper to taste

Hawaiian Sauce

  • ¼ cup soy sauce

  • 2 tbsp honey

  • 2 tbsp pineapple juice (from can or fresh)

  • 1 tbsp ketchup (optional but classic)

  • 2 cloves garlic, minced

  • ½ tsp ginger (fresh or powdered)

  • ½ tsp chili flakes (optional)


Instructions

1. Preheat

  • Preheat oven to 400°F (200°C).

  • Line a sheet pan with parchment for easier cleanup.


2. Prepare the Sauce

  • In a bowl, whisk together soy sauce, honey, pineapple juice, ketchup, garlic, ginger, and chili flakes.


3. Assemble the Sheet Pan

  • Add chicken pieces, bell peppers, onion, and pineapple to the sheet pan.

  • Drizzle with olive oil, salt, and pepper.

  • Pour half of the Hawaiian sauce over everything and toss to coat evenly.


4. Bake

  • Spread ingredients evenly on the sheet pan.

  • Bake for 20–25 minutes, flipping halfway.

  • Brush with remaining sauce and bake an extra 5 minutes for caramelization.


5. Serve

Serve with:

  • Rice

  • Cauliflower rice

  • Quinoa

  • Noodles

Garnish with:

  • Green onions

  • Sesame seeds

  • Extra pineapple chunks
