Mediterranean Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce

Ingredients

For the Chicken

  • 1 lb chicken breast, sliced or pounded thin
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp oregano
  • Salt & pepper to taste

For the Broccoli

  • 2 cups broccoli florets
  • 1 tbsp olive oil
  • Salt & pepper

Other Bowl Ingredients

  • 1 cup cooked rice, quinoa, or couscous
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • Optional: olives, feta, red onion

Creamy Garlic Sauce

  • 1/2 cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced or grated
  • Salt & pepper

Instructions

  1. Marinate Chicken:
    Mix olive oil, lemon juice, garlic powder, paprika, oregano, salt, and pepper. Coat chicken and marinate 10–30 minutes.
  2. Cook Chicken:
    Grill on a pan or grill for 4–5 minutes per side until cooked and lightly charred. Slice.
  3. Prepare Broccoli:
    Toss broccoli with olive oil, salt, and pepper.
    Roast at 425°F (220°C) for 15 minutes or sauté/air fry until crisp-tender.
  4. Make Garlic Sauce:
    Mix Greek yogurt, lemon juice, olive oil, garlic, salt, and pepper until creamy.
  5. Assemble Bowls:
    Add rice/quinoa, top with grilled chicken, roasted broccoli, tomatoes, cucumbers, and any extras.
  6. Finish:
    Drizzle generously with creamy garlic sauce and serve warm.

Tips

  • Add hummus for extra Mediterranean flavor.
  • Swap chicken for shrimp or tofu.
  • Great for meal prep — store 3–4 days in the fridge.
