Mediterranean Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce
Ingredients
For the Chicken
- 1 lb chicken breast, sliced or pounded thin
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp oregano
- Salt & pepper to taste
For the Broccoli
- 2 cups broccoli florets
- 1 tbsp olive oil
- Salt & pepper
Other Bowl Ingredients
- 1 cup cooked rice, quinoa, or couscous
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- Optional: olives, feta, red onion
Creamy Garlic Sauce
- 1/2 cup Greek yogurt
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 clove garlic, minced or grated
- Salt & pepper
Instructions
- Marinate Chicken:
Mix olive oil, lemon juice, garlic powder, paprika, oregano, salt, and pepper. Coat chicken and marinate 10–30 minutes. - Cook Chicken:
Grill on a pan or grill for 4–5 minutes per side until cooked and lightly charred. Slice. - Prepare Broccoli:
Toss broccoli with olive oil, salt, and pepper.
Roast at 425°F (220°C) for 15 minutes or sauté/air fry until crisp-tender. - Make Garlic Sauce:
Mix Greek yogurt, lemon juice, olive oil, garlic, salt, and pepper until creamy. - Assemble Bowls:
Add rice/quinoa, top with grilled chicken, roasted broccoli, tomatoes, cucumbers, and any extras. - Finish:
Drizzle generously with creamy garlic sauce and serve warm.
Tips
- Add hummus for extra Mediterranean flavor.
- Swap chicken for shrimp or tofu.
