Mediterranean Ground Beef Skillet

Ingredients

For the Skillet

  • 1 lb (450g) ground beef (lean)

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 1 red bell pepper, diced

  • 1 zucchini, diced

  • 1 cup cherry tomatoes, halved

  • 1 cup cooked quinoa or brown rice (optional but great for a meal)

  • 2 cups fresh spinach

  • ¼ cup kalamata olives, sliced

  • ¼ cup crumbled feta cheese

Mediterranean Seasoning

  • 1 tsp paprika

  • 1 tsp dried oregano

  • ½ tsp cumin

  • ½ tsp chili flakes (optional)

  • Salt & pepper to taste

  • 2 tbsp olive oil

  • Juice of ½ lemon


Instructions

  1. Brown the Beef
    Heat 1 tbsp olive oil in a skillet. Add ground beef, season with salt & pepper, and cook until browned. Drain excess fat if needed.

  2. Add Aromatics
    Add onion & garlic. Sauté 2–3 minutes until fragrant.

  3. Add Veggies
    Stir in zucchini, bell pepper, and cherry tomatoes. Cook for 5–7 minutes until softened.

  4. Season
    Add paprika, oregano, cumin, and chili flakes. Mix well.

  5. Add Spinach & Olives
    Toss in spinach and olives. Cook just until spinach wilts.

  6. Finish With Lemon & Feta
    Turn off heat. Drizzle olive oil and lemon juice. Sprinkle feta over the top.

  7. Serve
    Serve as-is, with quinoa, brown rice, or in lettuce wraps.

  • Chickpeas

  • Fresh parsley or dill

  • Roasted red peppers

  • Sun-dried tomatoes
